Interestingly, it was found that the percentage reduction of breast muscle creatine was 17% in wooden breast affected muscle and 4% in white stripping compared to normal pectoral muscle. In addition, the percentage reduction of glycogen in the muscles affected by wooden breast was 31%, and 26% lower in muscles affected by white stripping than in normal meat.
