The keynote panel session will address ways to avoid risks to guarantee food safety
São Paulo, July 4th, 2013 –Prevention and control of risks related to infections caused by Salmonella is a major concern in the industry. To discuss this issue, the International Poultry Exhibition (SIAV), between 27 and 29 August 2013, at Anhembi, in São Paulo (SP), will promote the panel "Poultry and public health."

Researchers Dália dos Prazeres (Fiocruz) and Fernanda Marques (UNICEF) will participate in this meeting which will be moderated by Simone Machado, Professor at the Fluminense Federal University (UFF). Dália dos Prazeres will address the prevalence of new Salmonella serotypes in Brazil and Fernanda Marques will talk about tools for epidemiological tracing of Salmonella and antibiotic resistance marker genes.

"Food safety, the most important prerequisite for production and marketing of food worldwide, is supply chain´s responsibility and commitment. The presentations in this panel were selected to address issues of greatest relevance to public health in relation to the consumption of poultry products, and thus require an understanding of the current status in Brazil and worldwide, as well as the guidelines and goals of possible preventive and control measures not only in the production chain, but also from field to table”, says Simone Machado.

One of the highlights of this panel will be the presentation of guidelines for the implementation of Campylobacter monitoring based on risk. Researcher Jens Kirk Andersen was invited to address this issue. Dr.Kirk Anderson has a Ph.D. in Veterinary Science, Microbiology by the Institute of Veterinary Microbiology, the Royal Veterinary and Agricultural University, Denmark, Copenhagen. He´ s Senior Adviser of the Division of Food Microbiology at the National Food Institute, Technical University of Denmark, which is a benchmark in Campylobacter control.

According to Ariel Mendes, Production Director of the Poultry Brazilian Union (UBABEF) and Director of the Scientific Program of the Congress, it is also important to highlight the presence of John Cason, Ph.D. from the University of Georgia who serves on the Agricultural Research Service / and the USDA Russell Research Center in Athens, Georgia (USA), where he specializes in studies of Salmonella and other bacteria during poultry processing. Cason will make a presentation focused on the quantification of Salmonellas related to food poisoning.

UBABEF is the organizer of SIAV, the most important meeting of the Brazilian poultry sector, which will have the theme "Value-added: new avenues for poultry innovation." The 23rd Brazilian Poultry Congress will take place in the event with more than 100 exhibitors from all areas of the supply chain. Learn more at the website www.ubabef.com.br/siav
