A Protease also called a peptidase or proteinase is an enzyme that catalyses proteolysis, the breakdown of proteins into smaller polypeptides or single amino acids. They do this by cleaving the peptide bonds within proteins by hydrolysis, a reaction where water breaks bonds. Proteases are involved in many biological functions, including digestion of ingested proteins, protein catabolism and cell signalling.
Use of protease enzyme is capable of improving soybean meal and other protein sources protein solubility, amino acids digestibility and reducing anti-nutritional factors such as trypsin inhibitors, glycinin, ß conglycinin. Exogenous protease enzyme supplementation in poultry feed may improve efficiency of poultry production by improving low quality feed ingredients digestion thereby reducing nutrient losses through excreta and lowering feed cost by reducing nutrition level of poultry diet without compromising performance.
Using a Protease enzyme can increase the protein utilization rate and therefore may decrease the dietary protein requirement in broiler chickens.
