An Advanced Listeria monocytogenes Intervention and Control Workshop, presented by the American Meat Institute Foundation, will be held Nov. 14-15 at the Hyatt Regency Denver in Denver, Colorado.
The workshop is designed to help manufacturers of ready-to-eat meat and meat products examine the issues surrounding testing and to provide experience in developing appropriate sanitation standards and procedures for processing RTE products.
A general session address will discuss "Producing Safe RTE Meat and Poultry Products: Public Health and Regulatory Implications for Listeria Control."
The first day will also include two concurrent educational sessions -- one that focuses on the basics for process control, sanitary equipment design and sanitation best practices and a second track that will discuss advanced intervention techniques, which is new to the 2006 conference.
Also on the agenda are breakout sessions on verification and validation and listeria best practices, a case study on root cause investigation and a talk on preparing a successful risk-based sampling and food safety assessment.
