I would appreciate if you could provide me some more information regarding source of yeast (bakery, brewer or ethanol), way of hydrolysis, chemical analysis, nutritional/functional values.

Yeast could be a source of nucleotides but only if it is hydrolysed and most of the times the nucleotides are not "free". The way of hydrolysis and a lot of other factors are important for an evaluation.
