live yeast most importantly use the free oxygen present in the rumen,produce malic acid and dicarboxylic acids,provide vitamins to rumen natural fungi,support the proliferation of lactic acid using bacteria. by all these supporting tools live yeast stabilise the rumen ph and enhance the production.but the dose/head is very low as compared to yeast extracts.
