Gelatinization of the starches during conditioning process

Good morning. I have a restlessness with regard to the practical form of determining the grade of starches gelatinization during the conditioning process, be it by means of charts, organoleptics mechanisms, etc. that is carried out in an analytical laboratory, but does another form exist of carrying it out?
