Organic milk is cream of the crop

The important note here is the cows grazing fresh pasture, not whether the pasture is organic or conventional pasture. It has been known for some time that, in general, the butter fat from grazing animals had a different (higher) trans fat (CLA) content than that of most cows fed preserved feedstuffs (dry feeds and silages).

The composition of milk fats and fatty acids depends on feed. Nutient composition of milk obtained from grass-fed (pasture) dairy animals is different from hay or concentrate fed animals. This difference is due to different nutrient intake, not because of organic or conventional. We would like to see the effects of organic and conventional feeds (same nutrient composition, but different source) on milk quality.
