Interestingly, it was found that the percentage reduction of breast muscle creatine was 17% in wooden breast affected muscle and 4% in white stripping compared to normal pectoral muscle. In addition, the percentage reduction of glycogen in the muscles affected by wooden breast was 31%, and 26% lower in muscles affected by white stripping than in normal meat. It is worth noting that GAA supplementation not only increase breast muscle creatine but also maintains the glycogen content in pectoral muscle, which underline the importance of the energy buffering system of creatine-phosphocreatine and its association with breast muscle glycogen, which regulates the glycolytic pathway of breast muscle and reduce muscle damage (Khalil et al., 2021).
