It’s a proven fact that modern poultry genotype produces more heat due to greater MBR (Metabolic activity). In chicken, air sacs are very important during panting used for heat exchange between body and environment. Increase panting --Increase CO2--High Blood PH (Alkalosis).
Modern poultry farming requires faster and better yield, for that birds are kept in atomized control environments with maximum density, under heavy loads of proteins and energies either in cage or floor tearing. All stressors are on chicken body and may alter the meat/organs quality. Currently meat and organs quality is at more concern in revenue calculation than bodyweight & FCR figures. (Traditional). As a wise saying, “never overlook even smallest step towards final goal”.
For achieving good returns of investment in poultry farming It is too important to produce all eatable chicken parts in good edible and value added packs to sell. In slaughtered and chilled chicken marketing industry the maximum issues come across in deteriorating the brand quality are poor carcass quality, breast hemorrhages, wooden breasts, petechial hemorrhages and most important pale and fragile LIVER. Liver is more valuable organ in poultry meat which gain hot sale item and faster off take in recent market studies record.
No one can deny the expected benefits from chicken liver diet, chicken liver, rich in protein 25% protein density, calories approx. 165 K Cal. It contains very high amount of important vitamins, B2, B5, B6, B12, A (Retinol), Folate. These vitamins have crucial role in DNA synthesis. Liver also offer a good range of essential nutrients, selenium, iron, zinc, potassium, manganese, phosphorus, sodium & calcium. As a substantial source of selenium which has anti-oxidant properties and involved in smoothing the thyroid functions in human body. The protein of chicken liver is comprehensive with all nine amino acids, exigently required for hormone productions and muscle building in maintaining a good body make up. Chicken liver has increased in importance for holding highest amount of vitamin C (Ascorbic acid) and along with Retinol (A) provides good support to our visionary and immune system. We may say, chicken liver diet is one of the most nutritious and healthy food because of its extra ordinary dense nutrients.
For achieving all above benefits is important to produce a good texture, unspotted, deep reddish soft and freshly look liver. Commonly observed in daily productions and slaughtering records that rejected liver percentage is increasing and causing a big loss in targeted revenue earnings. Average rejection percentage sometimes as high as 30%. Depending on the stressors loads, especially during last week prior catching noticeably heavy loads of antibiotics, Organic acids, biofilms removers, lots of liver tonics keep liver 24/7 under additional job, and disturbing the normal functioning process flow of liver, eventually minimizing the liver capacity for energy metabolism, digestion, and immune boasting. In addition, high ambient heat stress, internal heat increase with high breast temperatures involve in promoting stress on the liver oxidation, glycogenosis, glycogen synthesis, hormones production, and detoxifications. In last all stressors damage the organ”s natural strength, prone to injury during catching loading, long awaiting to shackle at processing plant, too high scalding temperature, heavy dose of sodium hypo chloride (Chlorine) for final decontamination and carcass washing.
Practical note is in maintaining the superior liver quality, along minimizing antibiotics load, ascorbic acid (Vitamin C) plays an important role in getting the required state of liver and enormous reduction in rejected liver percentage in the final product.
