So far, the effects of endotoxin on the meat quality may be still obscure. However, given the fact that endotoxins are related to liver injuries and induce an innate/specific-immune response that influence the lipid metabolism, I would not be surprised if endotoxins make an impact on the meat quality by either way.

No reply to my question on possible effects of Endotoxins on pork and readiness to sponsor the research work. I am ready to lead if fund is made available . My field is Animal management (meat science option).

Fagbuaro Sola Sunday My apologies for disappointing you by the vague answer. Yet, meat quality is a broad category including color, texture, taste, pH and many more. Lipid, as I mentioned above, is a major factor for meat quality regarding to intramuscular fat content, tenderness/firmness, juiciness and even the shelf life of the meat. It’s known that endotoxins influence the TNF-a, IL-1, IL-6, ROS …..which are all very potent regulators for lipid metabolism. However, since the effects of LPS on these factors and oxidation (to which direction) are still disputed, it is arbitrary to give a clear answer such as plasma LPS at what level makes the meat tougher/tenderer without considering the physiological/immune status and even the composition of the feed. The redness as you mentioned seems more correlated with myoglobin. However, the expression of myoglobin is also influenced by the ROS, interleukins and TNF- a, both in vivo and in vitro.

Therefore, if the endotoxins have an effect on meat quality? I think yes. To which direction or extent? For me, the most responsible answer would still be “I don’t know”… And I would not be surprised if one study observes very different results from the others, since the link between endotoxins and the meat quality is this complex. However, I do believe that the link of endotoxin and meat quality is rather indirect, unless someone shows that the LPS changes the quality of a piece of dead meat ; )

Endotoxins are very dangerous bacterial metabolites within the animal system. All efforts must be on deck to prevent this pathological condition in all livestock. Endotoxins not only causes abnormal tissue discoloration but also causes abnormal taste in meat and egg since they find their ways into the blood streams and vascular systems of livestock. This results in poor keeping quality of livestock products.
