Presentation The quality, the hygiene and the food safety is a main concern for the social-professional area, the authorities, the consumers, and the scientific researchers. It´s true that nowadays the food and alimentary chain pollutants are increasing and they are more diverse, and the inherent sanitary risks are more present. With the pathogenic micro-organisms and the alteration, the mycotoxins, the pesticides and the heavy metals, and more common yet the chemical pollutants, it´s a wide range. Similarly, the scientific researches are expanding further to conquer the dominion in the making of rapid detection tools, reliable analysis, identification, detoxification processes, as well as the management of sanitary risks in the agro-alimentary industries. The symposium organized by the Dhar El Mehraz Faculty (Laboratory of Applied Biochemistry and Alimentary Sciences) in association with the National Superior Agronomic School of Toulouse (Laboratory of Chemistry, France) and the faculty of Biological, Agrochemical and Environmental Engineering (Laboratory of the Alimentary Industries, Belgium) on the frame of the programs of Belgian-Moroccan cooperation (PIP, CUD) and French-Moroccan cooperation (AI 03/81), in collaboration with other Magrebian and European colleagues, wants to focus on the recent researching developments in the control of the food safety, and expose among the professional partners the different sides and possibilities of their implementation under the light of the participants´ experiences. Objectives One of the goals of the symposium is to gather the European and Magrebian experts, and focus on the status of the accomplished researches to control the food safety and the risks management linked to the alimentary chain pollutants. The aim is also to strengthen the North-South cooperation on scientific research and experiences exchange. This event will be also the occasion to make aware about the food hygiene and safety, as well as the possibilities to develop the research results and the proceedings developed in this field. Topics The themes of the symposium are framed on four main topics: Topic 1: Biological Pollutants (pathogenic micro-organisms and alteration). Topic 2: Mycotoxins and toxicogenic fungi. Topic 3: Pesticides and heavy metals. Topic 4: Management tools of sanitary risks on food chains.
